CHUTNEY.
English chutney recipe:
2 cups of chopped apples
1 large, chopped onion
1 cup of raisins or sultanas
1½ cups of brown sugar
2 cups of malt vinegar
2 teaspoons of mustard seeds
½ teaspoon of ground ginger
A pinch of salt
Method:
Add all the ingredients to a big saucepan and mix together, don’t worry if it looks like a mess.
Bring it to a boil then turn down to a low simmer, keep it simmering uncovered for 45-60 minutes, stirring it now and again so it doesn’t stick.
When it turns thick and glossy and you can draw a spoon through it without the mix rushing back in you are done.
Spoon it into clean jars, screw on the lids tight and let it cool.
Try to resist opening the jar for at least two weeks, this lets the flavour mellow.
Additional display presentation on a plate to allow for tasting.
